Canon 7d Picture Style Settings
I suspect most people on the forums who do bird shooting shoot in RAW, so that the picture style settings are not used. The best advice I can think of if you want to shoot JPEG and use the picture styles would be to experiment with different combinations to see what gives you the look you like. The problem with asking for advice on things like sharpening and contrast is that different people like different looks, so, for example, the advice you get from someone who likes a very 'contrasty' look wouldn't work for you if you like a more subdued look. Or perhaps you mean picture style settings in DPP?

Image Editing OK. I don't use Picture Styles at all. Yes, I shoot RAW most of the time because that allows me to change my mind about many of these settings later. But if I did for birds in flight I'd probably use Sports style, to get higher shutter speeds. For birds roosting, a 'Portraits' style might be more appropriate, using larger apertures and making busy background blur out nicely. Beyond that, experiment with tweaking the modes.
Added sharpness, perhaps some added saturation. These are 'recipes' though, that you might change a little to personal taste. And don't get stuck on these particular styles. Sometimes doing exactly the opposite, such as using slow shutter speeds to induce motion blur to BIF pictures, might be more interesting than following the herd with the obvious settings. 'Walk softly and carry a big lens.'
